How to Make Perfect Scrambled Eggs | He and She Eat Clean

Eggs! They are my favorite food group (hehe). I LOVE them. I actually prefer them boiled and could eat them for every meal. However, I've been experimenting lately and made the BEST scrambled eggs I've ever had. EVER. Scott approved and requests that I make them all the time now. Want to learn how? OK fine, I'll share. :-)

How to Make PERFECT Scrambled Eggs!

Ingredients:

  • 3 organic egg whites
  • 1 whole organic egg
  • 2 Tbsp 2% cottage cheese
  • Salt and pepper, to taste Coconut oil (to coat the pan)

 

Directions:

1. Coat pan with coconut oil. Add eggs.

2. Sprinkle eggs with sea salt and pepper.

3. Wait until the eggs start to bubble. Fold the eggs in and add cottage cheese.

4. Scramble the eggs in the pan combining the eggs and cheese.

5. Enjoy your amazing eggs!

He and She Tip:

You can use whatever amount of eggs you usually eat - just make sure to include at least one whole egg to get the full benefit of this method. :-)

I've mentioned before that boiled eggs are my favorite thing (no joke) and we make A LOT of them each week. We use a few different methods that we've shared before (here) but we are always up for trying new ones! After our readers mentioned this way to us we decided to give it a try (seems to be pretty popular on Pinterest too)! It has worked for me almost every time I've tried it except for one time...I think it was my fault for trying to bake too many at one time. I've had success with up to 18 eggs this way.

How to "Boil" Eggs in the OVEN

What you need:

Directions:

  1. Preheat oven to 350 degrees
  2. Place eggs in a muffin pan
  3. Bake for 30 minutes
  4. Transfer eggs to a bowl with cold water
  5. Peel eggs while they are still warm (I usually wait 5-10 minutes)

He and She Tip: You may need to adjust the cooking time depending on how many eggs you use.
