Disclaimer: NOW Foods sends us products each month to try. Organic Extra Virgin Olive Oil and Organic Maple Syrup were in our box this month! We also had a LOT of cranberries left from the large bag I bought from Costco. We decided to make these Maple Cranberry Brussels Sprouts to take for Thanksgiving. They turned out fantastic!

You can purchase many of the ingredients listed below here on Amazon or browse NOW Foods products here. They have so many products! Things like the maple syrup and sugarless sugar listed below to supplements, and even delicious energy/trail mixes!

Maple Cranberry Brussels Sprouts

Ingredients:

  • 2 lbs Brussels Sprouts
  • 1 cup Fresh Cranberries
  • 3 Tbsp Now Foods Extra Virgin Olive Oil
  • 1 tsp Sea Salt
  • 1 tsp Ground Black Pepper
  • 2 Tbsp Now Foods Organic Maple Syrup

Directions:

1. Rinse brussels sprouts and cut in half or quarters

2. Preheat oven to 350 degrees and line a baking sheet with parchment paper

3. In a large bowl, toss washed and cut brussels sprouts with everything except for the maple syrup

4. Bake for 25 minutes

5. Remove and stir brussels sprouts, add maple syrup

6. Bake for another 10-15 minutes

7. Enjoy!

We absolutely love to use our slow cooker this time of year. We use it for breakfast, lunch, and dinner! ;-) The other evening I wanted to make our Cranberry Apple Overnight Oats but I didn't have any apples or applesauce so I decided to make up another recipe. Lucky for you and lucky for me!

Clean Eat Recipe: Maple Cranberry Overnight Oats

Ingredients:

Directions:

  1. Spray your crock pot with non-stick spray (we use an olive oil mister).
  2. Put all the ingredients into your slow cooker and cook overnight on low (around 7-8 hours).
  3. Once cooked, stir oats to combine and serve. Store leftovers in an airtight container in the refrigerator.

This makes 8 servings. In order to get an accurate serving size, weigh all of your cooked oats and divide by 8.

Remember how we said we bought way too many cranberries (when we posted the Cranberry Banana Muffins)?! Well, we put those extra cranberries to good use in this recipe. It smells delicious and tastes even better!

Clean Eat Recipe: CRANBERRY APPLE STEEL CUT OVERNIGHT OATS

Ingredients:

  • 2 cups gluten free steel cut oats
  • 1 Tbsp honey
  • 1 1/2 cups fresh cranberries
  • 3/4 cup unsweetened organic applesauce
  • 2 apples, cored and sliced
  • 1/4 cup Stevia in the Raw
  • 1/2 tsp sea salt
  • 1/4 tsp pure vanilla extract (avoid HFCS)
  • 3 cups unsweetened vanilla almond milk
  • 3 cups water
