Clean Eating Breakfast Cookies | He and She Eat Clean

This is such a simple recipe, I can't believe I didn't do this sooner. For some reason I just wanted to make something different with my oats. Don't get me wrong a warm bowl of oats is still one of my favorite things, but I just wasn't feeling it. I decided to make something similar to the pancakes I make but with oats instead of oat flour. They turned out to look like cookies, so that is what I shall call them. They are SO GOOD!

P.S. These aren't just for breakfast, you can eat them anytime!

Clean Eat Recipe: Breakfast Cookies

Ingredients:

  • 1/2 cup quick oats
  • ~ 1 Tbsp oat flour
  • 1/2 cup water or unsweetened almond milk
  • ~ 1/4 tsp vanilla
  • 1/4 tsp stevia
  • dash of cinnamon
  • dash of sea salt

Directions:

  1. Heat pan over medium high heat
  2. Mix everything together in a small bowl
  3. Spoon onto warm pan and cook 1-2 minutes on each side (depending on how you like yours, I like them still a little goo-y!)
  4. Enjoy!

I made these sweet treats to celebrate Scott's birthday. Well, that was really just an excuse to make them. I was going to make our Chocolate Chip Cookies but wanted something thicker and more cake-like. These definitely hit the spot! They are easily made gluten free as well by using gluten free oats and oat flour. Get ready for this...I made these so that they would only be two servings! Feel free to share them with someone and not feel guilty about eating half the cookies!

Ingredients:

  • 1 cup organic garbanzo beans, rinsed and drained
  • 1/2 cup gluten free quick cooking oats
  • 1/3 cup gluten free oat flour
  • 1 whole organic egg
  • 1/4 cup unsweetened almond milk
  • 1 1/2 Tbsp coconut oil, melted
  • 1 1/2 tsp pure vanilla extract
  • 1/4 cup + 1 Tbsp Stevia in the raw (or more, if you prefer sweeter)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 squares dark chocolate (or more, if you want), broken into pieces

Directions:

1. Preheat oven to 350 degrees

2. Add all ingredients, excluding dark chocolate, to a food processor and process until ingredients are blended

3. Once blended, stir in dark chocolate

4. Coat muffin tins with coconut oil or use muffin liners and add batter

5. Bake for 18-22 minutes

6. Allow to cool and enjoy!

P.S. We think these are even better after they are placed in the refrigerator for a few hours!

I know that's a long title but it's the only way I know how to describe them! And the title isn't an exaggeration! I was skeptical at first but these cookies are so good and healthy! These are easily made gluten free by using gluten free oats.

The Most Amazing Healthy Chocolate Chip Cookies Ever!

Ingredients:

  • 1/2 can (150 g) organic garbanzo beans, rinsed and drained
  • 1 Tbsp unsweetened vanilla almond milk
  • 1/4 cup gluten free quick cooking oats
  • 1 whole organic egg
  • 2 squares dark chocolate (70% or higher)
  • 1 tsp pure vanilla extract (avoid HFCS)
  • 1 Tbsp Xyiltol
  • 1 Tbsp almond butter
  • 1/4 tsp baking powder
  • pinch sea salt

Directions:

1. Preheat oven to 300 degrees.

2. Add all ingredients, excluding chocolate, to food processor.

3. Pulse food processor until ingredients form a smooth texture.

4. Once ingredients are combined into a smooth texture, fold chocolate into batter.

5. Bake cookies for 10 minutes. Let cool for a few minutes before serving.

6. Enjoy!
