Gluten-Free Greek Yogurt Protein Pancakes

We looooove pancakes and eat them multiple times per week. We don't just eat them for breakfast though, we will eat them for lunch or dinner or even as a snack. I like to make little tweaks each time and wanted to share my newest creation with you.

NOW Foods was kind enough to send me wide variety of their products (yes, for free) to try out. As you know, I went up to Chicago a few months ago and met with many people at NOW Foods and was even able to tour their facility! I was very impressed with their products and the compnay in general so I'm excited to start introducing you to even more of their awesome products over the next few months. You can purchase many of the ingredients listed below here on Amazon or browse NOW Foods products here. They have so many products! Things like the maple syrup and sugarless sugar listed below to supplements, and even delicious energy/trail mixes!

Clean Eat Recipe: Greek Yogurt Protein Pancakes

Ingredients:

  • 1 cup oat flour (we use gluten-free oat flour)
  • 1 cup Greek yogurt
  • 1-2 Tbsp NOW organic maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup Ellyndale Naturals™ Sugarless Sugar™
  • 1 tsp pure vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Gluten-Free Greek Yogurt Protein Pancakes

Directions:

  1. Mix all ingredients together in a large bowl
  2. Coat pan with avocado oil or coconut oil (to prevent sticking)
  3. Pour batter onto pan in 1/4 cup increments
  4. Once pancake cooked on one side, flip and cook on the other
  5. Enjoy!

I've had this recipe done FOREVER because I've been making these almost every single week for Scott...I just could never get a good picture so I asked my amazing friend Kenzie (of Hettman Homestead) if she would make them and take a picture and she said yes! Another problem was that I also had no name for these and literally could not think of anything. Scott said to call them everyday pancakes (since he eats them every day). I'm not a big fan of the name but I'm going with it anyway! These pancakes are perfect to make in advance. We store them in the refrigerator and take out a few each time we want to eat them. You can heat them back up or enjoy them cold!

Clean Eating Everyday Pancakes

Ingredients:

  • 2 cups Oat Flour
  • 1/2 cup 2% Cottage Cheese
  • 3/4 cup Liquid Egg Whites
  • 1 cup Unsweetened Almond Milk
  • 4 oz Organic Unsweetened Applesauce
  • 1 Tbsp Coconut Oil, melted
  • 1/4 cup Stevia in the Raw
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Directions:

  1. Combine dry ingredients into large bowl. Add wet ingredients. Stir to combine.
  2. Spray or coat griddle with coconut oil to prevent sticking.
  3. Scoop batter onto warm griddle in 1/4 cup increments.
  4. Cook until browned, around 2 minutes. Flip to cook opposite side.
  5. Top with fruit, pure maple syrup, or enjoy them plain

How many pancakes this makes will depend on the size of your pancakes. It usually makes 12-14 for us.

  • Calories: 103
  • Carbs: 13 g
  • Fat: 3 g
  • Protein: 6 g
  • Sugar: 1 g
  • Fiber: 2 g

Hello! I am super excited to be guest posting on He and She Eat Clean!

My journey to living a healthier and happier life started in 2011 when I learned about weight lifting and how to cook delicious clean foods. I have always loved to cook but did not really know how to cook clean/healthy meals and actually enjoy them. One day I decided to go onto Pinterest and search “clean recipes” which led me to reading TONS of healthy food blogs. That was a total eye opener! Not only were the recipes healthy but they were very easy to make and SUPER delicious. I was sold.  Here I am 4 years later with 3 NPC fitness competitions under my belt, much more motivation and energy than I have ever had before and a much broader knowledge of healthy yet extremely yummy foods! I definitely still have a serious peanut butter addiction though. I fear that will never change.

Not only do I love peanut butter but I am quite a fan of chocolate. Dark chocolate, chocolate chip cookies, chocolate covered strawberries… etc. Below is one of my absolute favorite chocolate recipes to date. What’s even better is that it’s

a breakfast recipe. Chocolate for breakfast is a must… at least I like to think so!

Chocolate Chunk Protein Stack

Ingredients:

  • 1 tbsp Cocoa powder unsweetened
  • 2 tsp Oat Flour
  • 3 tsp Coconut Flour
  • 1/2 scoop Chocolate Protein Powder
  • 1 large egg
  • 3 egg whites
  • 5 drops liquid dark chocolate stevia
  • 1 tbsp enjoy life mini chocolate chips
  • Directions:

Blend all ingredients and cook on medium heat (be sure to flip them)

When done, stack and add your favorite toppings!

Toppings:

1 tbsp. Dark Chocolate Dreams

1 tbsp Enjoy Life mini chocolate chips

  • 397 calories
  • 26g carbs
  • 18g fat
  • 35g protein
