Not kidding here, it took us 16 months to take our Instant Pot out of the box. I was SO. SCARED. and I don't know why. I was just certain that it was going to blow the roof off of our house. I actually made Scott try it first. He made some sort of chicken dish. After that, I started making our boiled eggs and quinoa in it each week. And then that's all I did. Until last night when we made our weekly chili in it. SO FAST. What I normally leave in the crock pot for hours and hours took less than 40 minutes. But this isn't about chili, this is about chicken. I used to always make our chicken by boiling it on the stove. I even wrote about how to boil chicken here. I love it because it keeps the chicken juicy...we actually hate baked chicken because it's always so dry! The Instant Pot did the same thing but in less time and hands off (I only had to shred it, instead of monitor it the whole time to see when it started boiling, etc).

How to Make Shredded Chicken in the Instant Pot

Ingredients:

  • Boneless Skinless Chicken Breasts
  • Organic Chicken Broth (or water)
  • Spices, your choice (We use sea salt, black pepper, and minced garlic)

Directions:

1. Add chicken to Instant Pot

2. Add spices of your choice (we normally use sea salt, black pepper, and minced garlic)

3. Cover with chicken broth or water

4. Ensure that the vent is set to sealed and press the poultry button

5. Once the chicken is finished, allow a natural release for 5-10 minutes

6. Once cooled (5-10 minutes), shred chicken and enjoy!

I've been writing this post for three years, no joke! I have no idea why it took me so long to finally get it done but here it is. If you have never tried spaghetti squash, let this be the push for you to buy it next time you see it in the grocery store. It's simple to make and is very versatile.

I actually love to eat it as a side dish with really anything but I think it would be safe to say that most people use it in place of noodles. You could add some spaghetti sauce and ground beef, bison, or even chicken and enjoy it as a full meal.

How to Cook Spaghetti Squash

1. Preheat oven to 375 degrees

2. Line baking sheet with parchment paper

3. Slice the spaghetti squash lengthwise and scoop out the seeds

4. Drizzle with olive oil and season with sea salt and black pepper

5. Place cut side down on the baking sheet

6. Bake for 35 minutes or until tender enough to scrape out with a fork

How to Make Perfect Scrambled Eggs | He and She Eat Clean

Eggs! They are my favorite food group (hehe). I LOVE them. I actually prefer them boiled and could eat them for every meal. However, I've been experimenting lately and made the BEST scrambled eggs I've ever had. EVER. Scott approved and requests that I make them all the time now. Want to learn how? OK fine, I'll share. :-)

How to Make PERFECT Scrambled Eggs!

Ingredients:

  • 3 organic egg whites
  • 1 whole organic egg
  • 2 Tbsp 2% cottage cheese
  • Salt and pepper, to taste Coconut oil (to coat the pan)

 

Directions:

1. Coat pan with coconut oil. Add eggs.

2. Sprinkle eggs with sea salt and pepper.

3. Wait until the eggs start to bubble. Fold the eggs in and add cottage cheese.

4. Scramble the eggs in the pan combining the eggs and cheese.

5. Enjoy your amazing eggs!

You can use whatever amount of eggs you usually eat - just make sure to include at least one whole egg to get the full benefit of this method. :-)
