Kenzie's back with another awesome recipe! Remember her Apple Pie Protein Bars? If you haven't tried those yet, you should! We've had so many people contact us about how good they were! But back to these Peanut Butter & Jelly Bars, they are part of our BRAND NEW eCookbook, Baby Eats Clean (and toddlers too!)! We wanted to give you a sneak peak at one of the recipes in the book.

Clean Eat Recipe: Peanut Butter & Jelly Bars

Ingredients:

  • 1 cup pure peanut butter
  • 1 tsp pure vanilla extract
  • ½ cup plain Greek yogurt
  • ½ cup date sugar, coconut sugar, or 1 tsp liquid stevia
  • 1 tsp sea salt
  • 1.5 cups oat flour
  • 1 tsp baking powder
  • 1 cup jelly
  • ¼ cup raw unsalted peanuts, roughly chopped

Method:

  1. Preheat oven to 350 and grease a 9x9 baking dish, set aside.
  2. Stir peanut butter, vanilla, greek yogurt, sugar, and salt together in a medium size mixing bowl.
  3. In a separate small bowl, stir flour and baking powder together. Stir dry ingredients into wet ingredients. It should look like a crumble.
  4. Scoop out ½ a cup of the peanut butter crumble and stir the peanuts in for topping later, set aside.
  5. Pour the peanut butter dough into the greased baking dish pressing it down flat & evenly. Spread the jelly evenly over the top of the peanut butter bars, then crumble the peanut butter & nut topping over the jelly.
  6. Bake for 30 minutes or until golden brown on top. Let cool before cutting into squares.

Prep time: 5 minutes
Cook time: 30 minutes
Yields: 16 bars

Store in the refrigerator to maintain freshness.

Chocolate Peanut Butter Banana Mason Jar Overnight Oats

Wow. I should have started making these years ago! Just like with spiralizing vegetables, we are a little late to the game on overnight oats in a mason jar…but better late than never! We have a ton of oat recipes (like one of our most popular, Apple Cinnamon Steel Cut Oats) but many of them require a crock pot which also means more clean up.

Enter mason jar oats.

I actually have tried these once before but obviously did something wrong because I didn't like them. We've been super busy lately so I decided to give them another chance as a way to speed up our mornings. I must say I was successful this time!

This particular combination reminds me of our Banana Peanut Butter Protein Shake which is basically the best protein shake ever. So this is like eating that shake. Amazing.

You really don't need much for these so they are prefect for those on a budget. I recommend buying a set of 8 oz mason jars. You'll want all 12 to try different flavors – trust me! Plus, I love drinking juice and flavored water out of mason jars. Mason jars make everything better. It's a fact.

Mason Jar Overnight Oats

Chocolate Peanut Butter Banana

Ingredients:

  • ½ cup quick oats
  • ½ cup unsweetened almond milk
  • 1-2 tsp honey or maple syrup
  • 1 Tbsp peanut or almond butter
  • ½ banana, mashed
  • 1/8 tsp vanilla
  • 2 squares of dark chocolate (choose quality chocolate 70% or higher)

Directions:

  1. Mash banana and break up chocolate (I usually use a meat tenderizer for these tasks!)
  2. Add all ingredients to a mason jar and stir to combine
  3. Cover with lid and store in refrigerator for a few hours or overnight if you are making these the night before

Once ready just stir and eat – these are tasty cold but can also be heated up! These make a perfect meal paired with eggs or a protein shake!

Note: For these pictures I doubled the recipe so don't be alarmed if yours doesn't seem to fill up the mason jar as much.

Gluten Free Peanut Butter & Jelly Bites

Peanut Butter and Jelly...those words just scream "childhood" to me! I'm not a big sandwich person but I LOVE PB&J sandwiches! Scott & I were talking about them a few weeks ago and decided to make them into bites to take on our hike with us. They are the perfect cravings buster and great to give you a little boost of energy (just don't eat all of them!). Not to mention, these are perfect for kids. Who said that PB&J had to be a sandwich? Put some of these in their lunch box and mix it up a bit - I bet they even like these better! They are easily made gluten free by using gluten free oats.

PB&J BITES

Ingredients:

*If using rolled oats or extra thick rolled oats add approx 1 Tbsp unsweetened applesauce.

Directions:

  1. Combine all ingredients in a food processor
  2. Add 2-3 Tbsp warm water to mixture and pulse a few more times until ingredients start sticking together
  3. Spoon out onto parchment paper
  4. Chill until ready to eat

Makes approx 25 Balls.
