Baked Sweet Potato Chips

Yes, that's right! The title of today's post says, "Chips!!!!!" You didn't think the word "chip" would ever be in your vocabulary again since starting to eat clean, did you? Well, put it back in! You are about to embark on a world of healthy chip eating! Sweet potato chips that is. They are super (did I say super?!) easy to make and are perfect for satisfying your craving for a salty, crunchy snack without any guilt! Here's how you make them:

Eat Clean Baked Sweet Potato Chips

Ingredients:

  • 4 cups thinly sliced sweet potatoes (We HIGHLY recommend a mandolin. The one we have is only $15.99 from Amazon and it's FABULOUS!)
  • 1 TBSP olive oil OR coconut oil, melted (olive oil will help with the salty taste of the chip, but if you want sweet chips, opt for the coconut oil)
  • 1 TBSP coarse-ground sea salt

Directions:

1. Preheat oven to 275 degrees F.

2. Place thinly sliced sweet potatoes in a bowl with oil and salt. Toss to combine.

3. Spread sweet potato slices out on two baking sheets (if using a full 4 cups of sweet potatoes), careful that they are equally distributed.

4. Bake in oven for approximately 1.5 hours, tossing every 20-30 minutes to ensure each potato is cooked.

This is such an easy recipe and truly takes away our craving for chips from the store that were cooked in a vat of oil and aren't clean!

Strawberry Pancakes

My two favorite things - strawberries and pancakes! I know we have quite a few pancake recipes on the blog (5 to be exact, this makes 6), but who doesn't love light pink fluffy goodness! These babies are obviously clean and gluten-free so don't be afraid to whip some up! How much fun would these be to make for yourself and your family on Valentine's day?

Strawberry Pancakes

Ingredients:

  • 7 medium strawberries, stems removed and quartered
  • 2 TBSP water

  • 1 1/4 c gluten free oat flour
  • 2/3 c unsweetened applesauce
  • 2/3 c coconut milk (you could also substitute original, unsweetened almond milk)
  • 1/2 c unsweetened, plain 2% greek yogurt
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder

Directions:

1. In a medium saucepan, combine strawberries and water on medium to medium low heat and bring to a boil. Stir occasionally to prevent sticking or burning of strawberries. 

2. Cook strawberries for 4-5 minutes until strawberries are very soft and begin to breakdown, resembling strawberry jam.

3. Meanwhile, combine dry and wet ingredients (in second list) in a large bowl with a whisk. 

4. Remove strawberries from heat and using a fork or a potato masher, gently mash the strawberries.

5. Combine strawberries with pancake mix (step 3). 

6. Cook pancakes as you would normally on a griddle or stovetop.

Makes approximately 15 - 3" diameter pancakes.

Serving size is approximately 5 pancakes.
