This is a very simple (yet delicious) oatmeal recipe you can make overnight in a slow cooker that yields 12-14 servings! When making oatmeal in a slow cooker it is important to use steel cut oats which are the least processed form of oats aside from groats.  They are high in fiber and protein and are low on the glycemic index (about 40-45) so they are a perfect complex carbohydrate breakfast option (and this recipe makes it easy to have for the entire week)! Enough with the details, here's the recipe:

Clean Eat Recipe: Apple-Cinnamon Steel Cut Oats

Ingredients:

Directions:

  1. Spray your crock pot with non-stick spray.
  2. Put all the ingredients into your slow cooker and cook overnight on low (around 8 hours).

3.  Wake up to the delicious smell of your Apple-Cinnamon Steel Cut Oats.  Don't freak out...the picture below is what your oats will look like when you wake up.

4.  Stir a few times & serve!  See - all you have to do is stir, stir, stir!  :-)

If desired, you can add sliced apple, walnuts, almonds, flax seed, protein powder, or fresh berries.

He & She Tip:  Store in a container that holds at least 3.5 liters.

Gluten Free Version:  Use Gluten-Free Steel Cut Oats as an alternative.

Makes approx 12 servings.  I have found each serving to be around 1 1/2 cups.  However, if you have a scale you may want to weigh yours & divide that by 12 to get a more accurate weight of the serving size.

Crockpot Cinnamon Vanilla Applesauce

Want to usher in the fall season with the yummy scent of baking apples with cinnamon and vanilla?  If so, we have the right recipe for you!

Clean Crock Pot Cinnamon Vanilla Applesauce

Ingredients:

  • 8 medium-size Granny Smith apples, peeled (7 large Granny Smith apples can be substituted)
  • Juice of 1 lemon
  • 1/2 c water
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp maple sugar flakes (or sweetener of your choice)
  • 2 tsp pure vanilla extract (avoid HFCS)

Directions:

1. Peel apples and cut into quarters, careful to core apples as well (seeds are bad!). Place in bottom of crock pot slow cooker.

2. Add lemon juice, water, cinnamon, nutmeg, maple sugar flakes and pure vanilla extract.

3. Stir briefly - just enough to mix ingredients.

4. Cook on low for 2 hours and then raise temperature to high for 1.5 hours.

5. Stir, slightly mashing any apple chunks, serve and enjoy!

Why not take a little bit of time to slow cook a pot of crock pot black bean and sweet potato chili. Chances are, it will be ready when you are!

Clean Eat Recipe: Crock Pot Black Bean and Sweet Potato Turkey Chili

Ingredients:

Directions:

1. Put vegetables and beans in the bottom of the crock pot.
2. Layer ground turkey breast, spices, seasoning and water.
3. Place lid on crock pot and cook on low for eight hours. (He & She Tip: If you are pressed for time, 1 hr on high equals 2 hours on low.)
4. Carefully remove lid and stir chili. Adjust seasonings to taste.
5. Replace lid, cook for an additional 20-30 minutes on low. Serve.
