Clean Eat Recipe Sour Patch Grapes

Scott and I made these "Sour Patch" Grapes at the beach a few years ago. I'll be the first to admit...I was skeptical. Before I started my fitness journey I could {and did} devour a bag of Sour Patch Kids in a day (or...maybe an hour). It was my favorite candy! I won't say these taste exactly like Sour Patch Kids but they are pretty dang good!

Clean{er} Eat Recipe: "Sour Patch" Grapes

Ingredients:

  • Green Grapes
  • 1 Package of Sugar-Free Lime Jello (you could possibly use other flavors but I haven't tried those yet)

Directions:

1. Wash the grapes thoroughly but do not dry

2. Line a pan with wax paper & place the washed grapes into the pan

3. Cover with Jello & roll grapes around until covered

4. Place in the refrigerator for at least an hour

5. Enjoy!

We love making healthy desserts with unexpected ingredients! We have a few recipes made with garbanzo beans {cookie cake mini pies and chocolate chip cookies} - no, you can't taste them and would NEVER guess it is an ingredient! Scott whipped up this chocolate avocado pudding a few weeks ago and has literally made it almost every day since then! Have the kids try it too - they won't even know it's good for them!

Clean Eat Recipe: Chocolate Avocado Pudding

Ingredients:

Clean Eating Chocolate Avocado Pudding | He and She Eat Clean

Directions:

1. Add all ingredients to a Vitamix and blend until desired consistency is reached.

2. Place in refrigerator for 30 minutes to one hour or until chilled.

3. Enjoy!

Makes 4 Servings. This recipe can easily be split in half for 2 servings.

Healthy Cookie Cake Mini Pies

I made these sweet treats to celebrate Scott's birthday. Well, that was really just an excuse to make them. I was going to make our Chocolate Chip Cookies but wanted something thicker and more cake-like. These definitely hit the spot! They are easily made gluten free as well by using gluten free oats and oat flour. Get ready for this...I made these so that they would only be two servings! Feel free to share them with someone and not feel guilty about eating half the cookies!

Ingredients:

  • 1 cup organic garbanzo beans, rinsed and drained
  • 1/2 cup gluten free quick cooking oats
  • 1/3 cup gluten free oat flour
  • 1 whole organic egg
  • 1/4 cup unsweetened almond milk
  • 1 1/2 Tbsp coconut oil, melted
  • 1 1/2 tsp pure vanilla extract
  • 1/4 cup + 1 Tbsp Stevia in the raw (or more, if you prefer sweeter)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 squares dark chocolate (or more, if you want), broken into pieces

Directions:

1. Preheat oven to 350 degrees

2. Add all ingredients, excluding dark chocolate, to a food processor and process until ingredients are blended

3. Once blended, stir in dark chocolate

4. Coat muffin tins with coconut oil or use muffin liners and add batter

5. Bake for 18-22 minutes

6. Allow to cool and enjoy!

P.S. We think these are even better after they are placed in the refrigerator for a few hours!
