Looking for a special treat for Thanksgiving morning? It won't take much for these hearty pancakes to fill your stomach and make their way to your favorite recipe list! 

Eat Clean Whole Grain Pumpkin Pancakes

Ingredients: 

Directions:

1. Mix wet ingredients thoroughly in bowl: yogurt, pumpkin, applesauce, almond milk and egg.

2. Slowly add dry ingredients, combining after each ingredient is added. 

3. Heat a skillet over medium heat.

4. Cook pancakes thoroughly on both sides.

Suggested Serving Size - 2, 3-4" pancakes

I had a lot of "dying" bananas on my hand and wanted to make use of them.  I wasn't feeling Banana Bread so I decided that I would re-make our Blueberry Muffins into Banana Muffins!  Oh my gosh, they were amazing!

Eat Clean Recipe: Banana Muffins


Ingredients:

  • 1 1/2 cups oat flour
  • 1/2 cup rolled oats
  • 1/3 cup Xylitol
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup unsweetened vanilla almond milk
  • 1/4 cup unsweetened applesauce
  • 1 tsp pure vanilla extract (avoid HFCS)
  • 2 egg whites
  • 1 Tbsp coconut oil, melted
  • 1 cup mashed bananas (2-3 large bananas)

Directions:

1. Preheat oven to 400 degrees. Line your muffin tin with liners for easy clean up.

2. Combine dry ingredients into a large mixing bowl.

3. Creating a well at the bottom of the bowl, begin adding and mixing in wet ingredients until combined.

4. Stir mashed bananas into the batter.

5. Fill each muffin tin and bake for 22-24 minutes until golden brown.  Let cool for 5 minutes before removing from muffin tin.

Makes 12 muffins.

Are you craving all of those yummy pumpkin fall goodies but don't want the extra calories? These muffins are super easy to make and will satisfy that craving in the 25 minutes it takes to whip them up and bake them! Below is the recipe:

Clean Eat Recipe: Pumpkin Cranberry Protein Muffins

Ingredients:

Directions:

1. Preheat oven to 350 degrees F. Prepare muffin tins.

2. Mix first 6 ingredients together in a large bowl. Make a well in the center of the dry mixture.

3. Add the next 5 ingredients, stirring to combine into a batter.

4. Fold cranberries into batter.

5. Fill muffin tins with batter 3/4 of the way. Bake at 350 degrees F for 17-20 minutes, until golden brown.

Notes:

  • Some people have commented that they had to bake these for 45-50 minutes. Times can vary according to your oven!
