Cranberry Banana Muffins

We bought the huge bag of cranberries from Costco and we have so many cranberries we are having to come up with multiple new recipes just to use them all (lucky for you!). These Healthy Cranberry Banana Muffins are perfect for winter mornings!

Clean Eat Recipe: Cranberry Banana Muffins

Ingredients:

  • 1/2 cup gluten free oat flour
  • 1/2 cup gluten free rolled oats
  • 1/3 cup Stevia in the Raw
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • pinch salt
  • 1/4-1/2 cup unsweetened almond milk
  • 1 Tbsp unsweetened applesauce
  • 1 egg white
  • 1/2 Tbsp coconut oil, melted
  • 1 banana, mashed
  • 3/4-1 cup fresh cranberries

Directions:

1. Preheat oven to 350 degrees. Line your muffin tin with liners for easy clean up.

2. Combine dry ingredients into a large mixing bowl.

3. Creating a well at the bottom of the bowl, begin adding and mixing in wet ingredients until combined.

4. Stir mashed bananas into the batter.

5. Fill each muffin tin and bake for 24-30 minutes until golden brown.  Let cool for 5 minutes before removing from muffin tin.

Makes 6 muffins.

Chocolate Chip Pancakes

Um... heck, yes! It was "Brinner" time a few nights ago because I was just simply too exhausted to make a real meal and we decided to take this recipe for a spin. Oh boy! We felt like we were eating cookies for dinner! It's not every day, especially in our household, that you get Chocolate Chip Pancakes, and certainly not for dinner!

Eat these sparingly if you are trying to fit them into your macro ratios, but I certainly recommend that you try this gluten-free goodness. Your kids will LOVE them and those cravings - they will be gone in an instant. Unless, of course, you start craving these pancakes. 


Eat Clean, Paleo Chocolate Chip Pancakes
 

Ingredients:

Directions:

1. Combine the first 8 ingredients using an electric mixer. Mix thoroughly.

2. Fold in chocolate chips using a spatula.

3. OPTIONAL: Spray or lightly coat pan with coconut or olive oil to prevent sticking. 

4. Proceed as you would to cook pancakes.

Recipe Yield: Approximately 8, 5-6" pancakes
