Have you ever had pancakes that didn't need any syrup or any other toppings? Me either until I made these! We've been on a huge pancake kick lately and I feel like I've eaten pancakes literally every single day for the past month. I just can't get over how good they are and how easy they are to make!

I called these Cake Batter Pancakes because the batter is amazing and reminds me of "licking the bowl" when I was little. You could get creative and throw in some sprinkles to make them even more festive! ;-)

Clean Eat Recipe: Healthy Cake Batter Pancakes

Ingredients:

  • 1/3 cup gluten free oat flour
  • 3 Tbsp liquid egg whites
  • 3 Tbsp unsweetened almond milk
  • 1/2 tsp - 1 tsp pure vanilla extract (avoid HFCS)
  • 1 tsp Natvia sweetener (or sweetener of your choice)
  • less than 1/4 tsp baking powder
  • less than 1/4 tsp baking soda
  • less than 1/4 tsp salt

Directions:

  1. Add all ingredients to a mixing bowl & stir to combine. The batter will seem thick but keep stirring. I do not add extra liquid because I like mine fluffy but you can add liquid to reach your desired consistency.
  2. Coat (or spray) pan with olive oil or coconut oil to prevent sticking.
  3. Add batter once pan is warm.
  4. Cook for approx 2 minutes on each side or until slightly browned.
  5. Enjoy!

He and She Tip:

This typically makes 3 pancakes using the ingredients as listed (which is one serving) but this can easily be doubled. The number of pancakes will vary depending on how much liquid you use and how large you want them.

We even made these for a brunch and everyone loved them (even those who aren't into eating healthy)! We also had cage-free scrambled eggs, bacon, and sausage (meat from quality sources)!

Gluten Free Strawberry Pie Oatmeal Bake

Did you have a chance to try the Blueberry Burst Oatmeal Bake that we shared a few weeks ago? If not, go get some blueberries and strawberries and make both of these! This is the perfect breakfast when paired with a source of protein such as eggs or a protein shake. It's so hard not to eat it all right out of the oven!

Clean Eat Recipe: Gluten Free Strawberry Pie Oatmeal Bake

Ingredients:

  • 1 cup Gluten Free Rolled Oats
  • 1 cup Gluten Free Quick Cooking Oats
  • 1-4 cup Gluten Free Oat Flour
  • 1/4 cup Stevia in the Raw
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2-1 tsp Pure Vanilla Extract (avoid HFCS)
  • 2 Egg Whites
  • 1/4 cup Unsweetened Applesauce (optional)
  • 1 cup Unsweetened Almond Milk
  • 1 cup Organic Strawberries (if using frozen strawberries, thaw prior to use)

Directions:

1. Preheat oven to 350 degrees

2. Spray 8" pan with non stick spray (we use an olive oil mister)

3. Combine all ingredients except strawberries and mix thoroughly. Add fresh or thawed strawberries. Stir to combine.

4. Bake for 20 minutes or until lightly browned on top

5. Enjoy!

He & She Tip: If the batter is too runny add 2 Tbsp of gluten free oat flour or 2 Tbsp of rolled oats.

Makes 4 servings.

Lately I have been craving cereal like crazy! I looked in the pantry and saw Rice Cakes and decided that I would crunch up a rice cake & see if I could get it to taste like Rice Krispies. I played around with a few different sweeteners over a few days and below is my favorite combination! Come on, it's NOT Rice Krispies but a MUCH better option!

The best news is...You probably already have all the ingredients in your house!

Clean Eat Recipe: Rice Cake "Cereal"

Ingredients:

Directions:

  1. Crumble a rice cake into tiny pieces (I usually do this with a meat tenderizer)
  2. Add rice cake to a bowl and add remaining ingredients!
