Avocados are one of our favorite things here at He & She. What better to use during a fun Halloween party (remember, ditch that candy!) than something that's already green, Avocados from Mexico!

What post would be complete without sharing an AMAZINGLY Green recipe using avocados that you can share with your friends at your upcoming Halloween bash?!? Try this one!


Shrimp Avocado and WinterFruit Salad

  • Serves: 4
  • Prep time:  18 min.
  • Cook time:  0 min.

Ingredients:
1 avocado from Mexico, halved, pitted, peeled and sliced
3 cups bite-sized salad greens
1 mango, peeled, pitted and cubed (about 2 cups)
1-1/3 cups seedless red grape halves
1/2 cup prepared orange-flavored salad dressing (from an 8-ounce bottle)
1 pound cooked shrimp, peeled and deveined
1 lime, cut in wedges

 

Preparation:

In a large bowl, toss greens, mango and grapes with half of the salad dressing. Arrange avocado and shrimp on top; drizzle with the remaining dressing. Serve with lime wedges.
