Clean Eat Recipe: Paleo Stuffed Bell Peppers

Have you ever heard of Steve's PaleoGoods? They reached out to us a few weeks ago and sent us a sample of products they offer and we loved them! We've taken many of them on our hikes and they provide the perfect snacks for outdoor adventures!

I would have to say my favorite was the dried strawberries. I rarely eat dried fruit because it's so hard to find it without any added sugars but the dried strawberries they sent were amazing and the only ingredients were dried strawberries and apple juice concentrate! The picture below was taken on one of our hikes to the top of Yonah Mountain in Cleveland, GA.

We were surprised to find some sauces in the package they sent. We immediately tried them both (Ginger Cilantro and Maple Mustard) and loved them! We've added them to almost everything we've been eating (mahi mahi, chicken, etc). Using the Ginger Cilantro sauce, we created this quick recipe that is perfect for busy nights because it takes less than 30 minutes to throw together and you can even save more time by prepping the chicken ahead of time like we do!

Clean Eat Recipe :: Paleo Stuffed Bell Peppers


Ingredients:

1 lb ground chicken (or your choice of meat) + ingredients used in this Honey Chipotle Ground Chicken recipe

3 green bell peppers

1 avocado or guacamole

Chopped greens (spinach, kale, etc)

1 Tbsp Paleo Chef Ginger Cilantro

 

Directions:

1. Preheat oven to 350 degrees

2. Brown the chicken using our Honey Chipotle Ground Chicken recipe

3. Wash and cut the green peppers

4. Stuff the peppers with cooked meat and shredded greens

5. Cook stuffed peppers for 20 minutes

6. Top with avocado or guacamole and cover with Paleo Chef Ginger Cilantro

 

If you do not follow a paleo diet you could also add brown rice, black beans, or quinoa.

Pasta Night in Less than 20 Minutes

One of my favorite things when I was little was looking forward to "Food Nights." Not necessarily, a bad thing, creating a night of the week that you have a particular genre of food each week can not only be fun but it can help you prep your meal plan for the week in a snap!

Picture this... it's Thursday and you have run out of your Sunday prep food and you aren't quite sure what you are going to have for dinner. You want a fun meal that the ENTIRE family will enjoy, but you want it to be clean and healthy too. Why not incorporate a pasta night? No... we aren't talking floury pastas with cheese and cream. This is a flavorful, protein-packed brown rice pasta dish that you can make when all you have is 20 minutes. (It doesn't hurt that this tastes like (we say like, because it's better!) a pepper pasta dish at one of those famous chain Italian restaurants *wink, wink*.)

Clean Eating Sausage and Peppers Pasta
Pasta Night in Less Than 20 Minutes!

Ingredients:

Directions:

1. Spray large sauce pan with olive oil spray and heat over medium heat.

2. Add red and green bell peppers and yellow onion. Saute in pan until peppers begin to soften and onions are almost clear.

3. Add in sliced sausage and saute for 2-3 minutes.

4. Add pasta sauce and reduce heat to low.

5. Prepare pasta as directed.

Servings Size varies depending on your caloric needs of the pasta. However, the pepper/sausage mixture should yield enough 6 servings.
