The response to our How to Order a Cake from Costco post has been so awesome and obviously it was helpful to so many people that I was inspired tonight on our trip to Costco to share another how-to with you! This one is how to order a party platter from Costco.

These platters are great for wedding or baby showers or even when you are hosting a crowd for the big game! I'm tempted to order one just to snack on during the week when we don't have time to cook!

Below are the options listed on the form:

  • Croissant Sandwich Platter (serves 16-20): $29.99
  • Chicken & Swiss Rollers (serves 20-24): $29.99
  • Shrimp Platter (serves 20-24): $39.99
  • Meat & Cheese Platter (serves 16-20): $26.99

All you have to do is fill out the form and drop it back off at Costco. You might even be able to fax or email yours in. Call your local Costco and see if this is an option!

Life has been moving fast and slow at the same time lately. This is going to be a short update but I wanted to post it anyway because I like to go back and look at the pictures. :)

MY SISTER IS GETTING MARRIED! That's what comes to mind over the last few weeks. I went with her a few weeks ago to look at a venue in North Georgia and then this past weekend Scott and I went to look at a few more with her. She's my only sibling and only 17 months older than me. :) The wedding will likely be next June or July.

Our life has also been consumed with postseason baseball. As I type this the Cubs are getting ready to play game 4 of the NLCS. They are down by 3 games so this is a must-win if they want to have a chance to make it to the World Series!

I'm on Week 4 of the She Sweats 12-Week Transformation. I've completed all of the workouts so far and can't wait to move onto the next segment! I love checking stuff off and knowing exactly what I have left to do!

She Sweats 12-Week Transformation

Two weekends ago we went to the Smokies with plans to climb Mt LeConte. We made it to the Smokies (a three-hour drive) and it was raining. We had been checking the forecast, which called for rain earlier in the week but then changed to no rain. We forgot our rain gear and didn't want to do this extremely difficult and long hike without rain gear and take the chance at getting sick. We were bummed but determined to make the most of it. The Chimney Tops trail had just re-opened so we decided we would do that trail instead. This trail was closed for over a year due to the (human-caused) fires last fall. It isn't open to the very top (the actual chimney tops) anymore so I'm glad we did it before the fires. I'm not sure if they are every going to re-open the whole thing which is a huge bummer.

It was a year ago that I posted about my aunt being in the hospital & then the day before Thanksgiving she was taken off life support. She's been on my mind a lot lately & I saw a lot of her today. Our day didn't go as planned...we drove 3 hours to the Smokies but forgot our rain gear (because it wasn't supposed to rain!) so we ended up doing a hike much shorter (but still hard!) than the one we had planned. I saw her in everything on the hike. When we left the Smokies to go to Scott's brothers to watch the Cubs (who lost) we stopped by a produce stand to buy a pumpkin. She was there again in these little birds and owls that were hand carved out of tree bark. She LOVED birds (and I've never been a big fan!). If we would have been able to do the hike we planned I would have missed out on these moments because we would have been rushed. Sometimes it's nice to have time to absorb what is going on around you.

Nutrition

After our hike to Chimney Tops we went to Athens and stopped by Trader Joes. We love Trader Joes but we have to drive 45 minutes to an hour to the closest one so we don't get to go as often as we would like to. We bought a lot of random things like brown rice pasta, black bean pasta, cereal, produce, and beer (Scott's!). Of course we did our normal weekly Costco shopping too!

We are so excited to tell you about this new product we found in… you guessed it… Costco! It was the Sunday after we returned from our hiking trip to Colorado and we were there to fill our refrigerator and freezer back up. We just so happened to walk by a table that had many different flavors of muffins out. I recognized the name but had never tried the product before. We tried each flavor and we were AMAZED. As soon as I got home, I reached out to them to see if they would work with us because we knew that YOU would also love them.

These muffins are not just any muffin. Yes, the names are something that you would expect and relate to, like blueberry oat, banana chocolate chip, and chocolate but the ingredients are definitely not what you would expect! As I mentioned, veggies are the first and primary ingredient in every product. Not only that, they are gluten free, dairy free, nut free, non-GMO and Good House Keeping Nutritionist approved!

We know that everyone’s first thought is that these muffins would be a great way to get kids to eat more veggies but they are not only a great way to get kids to eat their veggies, they are also a great way to get adults to eat more veggies! We are often worried about kids eating enough veggies but we tend to overlook the fact that we, ourselves, are typically lacking in the veggie consumption department.

Garden Lites Muffins

The Blueberry Oat Muffins, Banana Chocolate Chip Muffins, and Chocolate Muffins all contain 120 calories per muffing with zucchini as the first ingredient. The Ninja Power Muffins (yes, like Ninja Turtles!) are only 80 calories with zucchini as the first ingredient and the Chocolate Krabby Square Muffins are only 60 calories also with zucchini as the first ingredient. Garden Lites muffins are great for lunch boxes (of kids and adults!) or great for an on-the-go breakfast. We took a few in a cooler to eat after our hike last weekend. It was the perfect post trail snack that held us over until we got home!

As with many products in Costco, this product may not be available in every Costco and may not be available all the time. If you don’t see it in your store, request that they order it!
