Clean Eat Recipe: Gluten Free Power Granola

Ingredients:

Directions:

1. Preheat oven to 300 degrees

2. Line baking sheet or pan with wax or parchment paper

3. Mix all dry ingredients together in a large bowl

4. Add wet ingredients to dry ingredient mixture and combine

5. Spoon out mixture onto lined baking sheet

6. Bake for 15-20 minutes. Stir granola and bake for an additional 15-20 minutes.

Bacon Wrapped Asparagus

Every once in a while in the Staples household, we get fancy. Remember, we have a 16-month old (who wolfed down two of these entire "packs" of asparagus AND salmon - wow!), so we don't have time to spend hours in the kitchen. These are the perfect appetizer or side dish to make for parties or a romantic dinner because they take all of 5 minutes to prep and about 10-12 minutes to bake.  Their taste is amazing too!

Note: Wondering if bacon is clean? We buy the best cuts of organic bacon we can find. This means humanely raised, pasture-raised pork with very little to no sugars. 

Ingredients:

  • 24 fresh asparagus stalks
  • 3 pieces of bacon, cut in half 
  • 6 wood toothpicks

  • coarse grind sea salt
  • coarse grind black pepper
  • onion powder

Directions:

1. Preheat oven to 385 degrees F. 

2. Prepare your asparagus stalks by washing/rinsing and cutting off ends.

3. Group 4 asparagus stalks together and secure by wrapping a piece of bacon around the stalks and securing with a toothpick.

4. Place on a foil-lined baking pan and sprinkle sea salt, black pepper and onion powder on asparagus/bacon "packs" to taste.

5. Bake for 10-12 minutes until bacon is fully cooked. 

6. Allow to cool slightly. Serve warm.

Serving Size: 

Count on about 2-3 "packs" per person.

Ingredients:

1 yellow or Vidalia onion, large

½ c French’s 100% Natural Mustard

1 egg

1 TBSP apple cider vinegar

1 c gluten-free oat flour

1 TBSP garlic powder

1 TBSP black pepper

1 TBSP baking powder

1 tsp sea salt

Directions:

1. Preheat oven to 350 degrees F. Prepare a baking sheet lined in foil.

2. Prepare onions by peeling onion and cutting in a “ring” fashion. Separate onion rings once cut and set to the side.

3. Combine French’s 100% Natural Mustard, egg and apple cider vinegar in a bowl, whisking to combine.

4. In an additional bowl, combine Gluten-Free Oat Flour, garlic powder, black pepper, baking soda and sea salt.

5. Dip your onion into the mustard mixture, being sure to coat the onion entirely.

6. Dredge the onion into the flour mixture, combining thoroughly.

7. Repeat steps 5-6 and place on baking sheet.

8. Bake onions at 350 degrees F for approximately 17-20 minutes until golden brown.
