Oven Baked Root Vegetables with Butternut Squash

Have you ever tried root vegetables like turnips, rutabagas or butternut squash? Why not include those too? Before you turn your nose up at them, the flavor mix from baking them in the oven, along side your sweet potatoes is divine! Here's how to do it:

Oven Baked Root Vegetables and Butternut Squash

Ingredients: 

  • 4 medium-size sweet potatoes (approx 1.5 lbs), cubed
  • 4 medium-size turnips (approx 1 lb), peeled and cubed
  • 2 rutabagas (approx 1 lb), peeled and cubed
  • 1 butternut squash (approx 1 lb), peeled and cubed, seeds removed
  • 1 TBSP coconut oil, melted
  • 1 TBSP garlic powder
  • 1 TBSP sea salt
  • 1 TBSP onion powder
  • 1 TBSP black pepper

Directions:

1. Preheat oven to 375 degrees.

2. Place sweet potatoes, turnips, rutabagas and butternut squash in a large mixing bowl.

3. Add coconut oil to bowl and stir to coat root vegetables and squash.

4. Begin adding spices one by one, stirring to combine before adding another spice. 

5. Spread vegetable/squash mixture on a large baking pan (or two if you need more room). 

6. Bake for approximately 45-55 minutes, until vegetables are soft and tender to the touch.

Roasted Brussels Sprouts

Try these simple roasted brussels sprouts as a side dish at dinner!

Ingredients:

  • Brussels Sprouts
  • Olive Oil
  • Sea Salt
  • Pepper
  • Garlic Powder

Directions:

1. Preheat oven to 400 degrees

2. Line cookie sheet with foil for easy to clean up

3. Place brussels sprouts on cookie sheet in one layer

4. Drizzle with olive oil and spices

5. Bake for 20 minutes, turning (or shaking) the pan halfway through.

Baked Sweet Potato Chips

Yes, that's right! The title of today's post says, "Chips!!!!!" You didn't think the word "chip" would ever be in your vocabulary again since starting to eat clean, did you? Well, put it back in! You are about to embark on a world of healthy chip eating! Sweet potato chips that is. They are super (did I say super?!) easy to make and are perfect for satisfying your craving for a salty, crunchy snack without any guilt! Here's how you make them:

Eat Clean Baked Sweet Potato Chips

Ingredients:

  • 4 cups thinly sliced sweet potatoes (We HIGHLY recommend a mandolin. The one we have is only $15.99 from Amazon and it's FABULOUS!)
  • 1 TBSP olive oil OR coconut oil, melted (olive oil will help with the salty taste of the chip, but if you want sweet chips, opt for the coconut oil)
  • 1 TBSP coarse-ground sea salt

Directions:

1. Preheat oven to 275 degrees F.

2. Place thinly sliced sweet potatoes in a bowl with oil and salt. Toss to combine.

3. Spread sweet potato slices out on two baking sheets (if using a full 4 cups of sweet potatoes), careful that they are equally distributed.

4. Bake in oven for approximately 1.5 hours, tossing every 20-30 minutes to ensure each potato is cooked.

This is such an easy recipe and truly takes away our craving for chips from the store that were cooked in a vat of oil and aren't clean!
