Clean Eat Recipe :: Sweet & Spicy Sweet Potato Chips

Do you have a problem getting in all of your water for the day?  Make these Sweet & Spicy Sweet Potato Chips & you will not have that problem anymore!  ;-)

Clean Eat Recipe :: Sweet & Spicy Sweet Potato Chips

Ingredients:

Directions:

1. Preheat oven to 425 degrees

2. Cut sweet potatoes into "chips"

3. Add sweet potatoes to a ziploc bag & then add olive oil

4. Toss the bag until chips are covered in olive oil, then add spices & toss until chips are coated with oil & spices

5. Spray sheet with non-stick spray & lay sweet potatoes flat (in one layer) on a baking sheet.

6. Bake for 18-20 minutes (depending on the crispiness you prefer).

7. Flip over chips & bake for another 18-20 minutes (depending on the crispiness you prefer).

A favorite of Jim's and definitely a lasting clean eating, non processed alternative to those unhealthy (but yummy, I know!) yams we eat at Thanksgiving and Christmas chock full of maple syrup, sugar and marshmallows. This recipe is a great substitution for those calorie and sugar-rich concoctions. Take it over to the family meal... it's sure to please!

Ingredients:

  • 5 cups baked sweet potatoes, peeled
  • 2/3 cup 2% milk
  • slightly less than 1/4 cup agave nectar
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • pecans, if desired

Directions:

1. Preheat oven to 350 degrees F. Wash and wrap whole sweet potatoes (unpeeled) in individual foil pockets.

2. Once oven is heated, place sweet potatoes on wire oven rack or place on baking sheet and then place in oven. Bake for 1 1/2 hours or until sweet potatoes are soft.

3. Remove sweet potatoes and baking sheet (if used) from oven. Allow potatoes to cool for approximately 10 minutes.

4. Unwrap foil pockets and peel skin off of potatoes (this is optional if you prefer mashed potatoes with the skin - personally, I have not tried the recipe with the skin on.) PLEASE NOTE: Be especially careful due to the temperature of the potatoes and skins - you can get burned if not careful! Place peeled sweet potatoes in a large bowl or in a bowl of a stand mixer.

5. Add milk, agave nectar, cinnamon and nutmeg to bowl.

6. Mix using an electric mixer for approximately 3-5 minutes until all ingredients are combined and potatoes are fluffy. Add pecans if desired.

7. Using a shallow ceramic dish, transfer sweet potato mixture and place in oven to bake at 350 degrees F for 10 minutes. Garnish with additional pecans if desired.

Tip: Sweet potatoes taste great the next day! Just don't forget to refrigerate them!

Clean Eat Recipe :: Protein Packed Angeled Eggs!

What a great way to reach your fitness goals with our friend and complete protein, the egg! Now, I have to be honest - I have never had a deviled egg in my life!  I was super excited to try this recipe for angeled eggs when I saw that it was clean and a great alternative to their higher fat, higher cholesterol evil cousin, the deviled egg.

Clean Eat Recipe :: Protein Packed Angeled Eggs!

Ingredients:

  • 6 eggs, hard boiled
  • 6-oz can tuna
  • 4 tbsp Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh squeezed lemon juice
  • 1 tbsp fresh chopped dill
  • Paprika, to garnish

Directions:

1. Slice eggs into halves lengthwise. Scoop out yokes and set aside.

2. In a medium-sized mixing bowl, finely mash 2 egg yolks with a fork. Discard remaining yolks.

3. In another bowl, finely mash tuna with a fork.

4. Combine tuna and egg yolks into one bowl. Add remaining ingredients and mix well.

5. Spoon mixture into hollowed-out egg whites. Sprinkle with paprika. Serve immediately or chill to allow flavors to meld.

There is one caveat... my Father-in-Law, who is not used to eating anywhere near remotely clean, decided to try one and I don't think that they were what he was expecting.  There is definitely a different taste than that of a deviled egg!  Worried? Try making a small batch before you plan to serve them just to make sure the family is up for it!
