Clean Eat Recipe: Shamrock Protein Shake

Anytime is a good time to drink this delicious refreshing protein shake but you have even more reason with Saint Patrick's Day right around the corner! Who says you have to wear green? Why not just drink it? This shake is great for pre or post workout (really anytime of the day) because of its protein/carb ratio! Drink up!

Clean Eat Recipe: Shamrock Protein Shake

Ingredients:

  • 1 kiwi, peeled
  • 1 handful of organic spinach (1-2 cups, try it - you can't taste it!)
  • 1/4 cup plain Greek yogurt
  • 3 Tbsp liquid egg whites
  • 1 cup unsweetened almond milk
  • 1 Tbsp honey or your sweetener of choice

Directions:

  1. Add all ingredients to a blender to combine (we used a Vitamix).

  • Calories - 306
  • Protein - 32 g
  • Carbs - 31 g

Gluten Free Peanut Butter & Jelly Bites

Peanut Butter and Jelly...those words just scream "childhood" to me! I'm not a big sandwich person but I LOVE PB&J sandwiches! Scott & I were talking about them a few weeks ago and decided to make them into bites to take on our hike with us. They are the perfect cravings buster and great to give you a little boost of energy (just don't eat all of them!). Not to mention, these are perfect for kids. Who said that PB&J had to be a sandwich? Put some of these in their lunch box and mix it up a bit - I bet they even like these better! They are easily made gluten free by using gluten free oats.

PB&J BITES

Ingredients:

*If using rolled oats or extra thick rolled oats add approx 1 Tbsp unsweetened applesauce.

Directions:

  1. Combine all ingredients in a food processor
  2. Add 2-3 Tbsp warm water to mixture and pulse a few more times until ingredients start sticking together
  3. Spoon out onto parchment paper
  4. Chill until ready to eat

Makes approx 25 Balls.

Healthy, Protein-Packed Hot Chocolate

We had a cold snap here in Georgia where all I wanted was hot chocolate. I'm pretty picky about hot chocolate too so it took me quite a few tries to get this one to where I would "approve" but I definitely think I hit the nail on the head, if I can say so myself! This will warm you up and also provide you with the protein you need. It's perfect as a "snack" during the day, maybe after breakfast or even right before bed while you are relaxing! You can't go wrong with this one! Try it and let us know what you think!

HEALTHY, PROTEIN-PACKED HOT CHOCOLATE

Ingredients:

  • 1 cup unsweetened vanilla almond milk
  • 1 tsp cocoa powder
  • 2 small scoops stevia
  • 1/4 cup liquid egg whites

Directions:

1. Combine all ingredients, excluding almond milk. Blend together using a hand blender. You can use a regular blender but because there isn't much liquid it will be more difficult so I suggest a hand blender/frother or even combining by hand mixing.

2 Heat almond milk over medium heat until it starts boiling (Be careful as it will overflow quickly!)

3. Add hot almond milk to blended ingredients and stir to combine
