Chocolate Whoopie Pies

Who doesn't like a little chocolate in their life once in a while? And how much fun are some whoopie pies? I spent some time "cleaning up" a friend's recipe. These make a great treat!

Clean Chocolate Whoopie Pies

For the Whoopie Cookie

Ingredients:

  • 5/8 c dark, unsweetened cocoa powder
  • 1/2 c oat flour
  • 1/4 c coconut flour
  • 1/8 tsp salt
  • 1 c Stevia in the Raw
  • 1/2 tsp baking soda
  • 1/8 tsp baking powder
  • 2/3 c unsweetened applesauce
  • 1/2 tsp vanilla extract (avoid HFCS)
  • 1 egg

Directions:

1. Preheat oven to 325 degrees F. Mix together dry ingredients in a bowl, whisking to combine. Mix wet ingredients in a bowl, combining thoroughly with a whisk, handheld mixer or a stand mixer.

2. Slowly incorporate dry ingredients into wet ingredient mixture, whisking to combine. Your batter will be of a dough-like consistency and very sticky.

3. Line a baking sheet with parchment paper OR use a non-stick baking sheet lightly spritzed with olive oil. Using a spoon, drop small dough balls onto a baking sheet.

4. Bake for approximately 15 minutes.

Makes 32 Whoopie cookies.

For the Filling

Ingredients:

Directions:

1. Combine yogurt and coconut oil, whipping with a handheld or stand mixer for approximately 5 minutes.

2. With mixer set to low, slowly add Stevia and vanilla to mixture.

3. Refrigerate for 2 hours.

Whoopie Filling is approximately 1 TBSP.

Combine filling in the middle of 2 Whoopie Cookies and you have a clean Whoopie pie!

Chocolate Caramel Peanut Bars

Ingredients:

Directions:

1. Make the caramels:

  1. In a medium sized saucepan, combine everything except for the vanilla and peanuts.
  2. Bring to a boil over medium-high heat, stirring with a wooden spoon.
  3. Reduce heat and continue to stir for approx 20 minutes.  Add vanilla.
  4. Once combined, place the mixture aside while making the rest of the bar.
    • Do NOT add the peanuts yet!

2. Using an electric mixer, combine 1/2 Tbsp water, brown rice syrup, melted coconut oil, vanilla, natural peanut butter, and salt until creamy.  Slowly add Stevia in the Raw.  Note: The Stevia in the Raw gives it a somewhat bitter taste at this point - this is okay!

3. Once combined, remove it from the bowl with your hands and press it into a lined or greased 4" pan.  Place in refrigerator to cool.

4. If your caramel has hardened, heat it back up for a few minutes until soft.  Once soft, mix in the peanuts.  Once filling from step 3 is firm, pour caramel over the filling.  Place back in refrigerator to cool.

5. Once your refrigerated mixture is firm (this could take a few hours), melt the chocolate in the microwave for approx 2 minutes, stirring halfway through.  Cut mixture into bite size bars and dip in melted chocolate to cover, using a fork.

6. Place bite size bars onto wax paper and allow to cool (this could take a few hours).

He & She Tip: We also poured some of ours into a lined muffin tin.  If you are also doing this, make sure you add melted chocolate to the bottom, then add the filling, and finally top off with more melted chocolate.

3 Ingredient Peanut Butter Cups

Ingredients:

Directions:

1. Mix honey and peanut butter together using an electric hand mixer until thick (approx 1 minute).

2. Heat chocolate in the microwave until melted, stopping to stir once (approx 1 minute).

3. Pour 1/2 melted chocolate mixture into a lined muffin tin.  Add peanut butter/honey mixture. Add the rest of the melted chocolate.

4. Place in the freezer until hardened (approx 30 minutes). 

He & She Tip: You can easily make this into a recipe for multiple Peanut Butter Cups, I just don't like to keep a lot of extra treats in our house!
