How to "Boil" Eggs in the Oven | He and She Eat Clean

I've mentioned before that boiled eggs are my favorite thing (no joke) and we make A LOT of them each week. We use a few different methods that we've shared before (here) but we are always up for trying new ones! After our readers mentioned this way to us we decided to give it a try (seems to be pretty popular on Pinterest too)! It has worked for me almost every time I've tried it except for one time...I think it was my fault for trying to bake too many at one time. I've had success with up to 18 eggs this way.

Directions:

  1. Preheat oven to 350 degrees
  2. Place eggs in a muffin pan
  3. Bake for 30 minutes
  4. Transfer eggs to a bowl with cold water
  5. Peel eggs while they are still warm (I usually wait 5-10 minutes)

He and She Tip: You may need to adjust the cooking time depending on how many eggs you use.

First of all, let me say that I LOVE eggs.  I eat them all different ways (my favorite is boiled) but over the course of coaching and one of my friends texting me and asking, "I'm struggling to come up with protein sources for breakfast.  I don't like eggs...trust me - I have even tried holding my nose and chugging the eggs. This could even be a good post". So, the item was formed to help all you non-egg eaters out there!

Protein Pancakes

Protein Bars

Greek Yogurt

Cottage Cheese

Quinoa

You don't have to eat "breakfast food" for breakfast!  You can have chicken or fish although most people won't eat that in the morning!  To trick yourself think of it as "Meal #1" instead of "Breakfast"!

Don't forget to check out our other breakfast recipes - cinnamon rolls anyone?

He and She Tip: Don't like Greek Yogurt or Cottage Cheese?  Make a smoothie with fruit and the Greek Yogurt or Cottage Cheese and you won't even be able to taste it!
