3 Ingredient Peanut Butter Cups

Ingredients:

Directions:

1. Mix honey and peanut butter together using an electric hand mixer until thick (approx 1 minute).

2. Heat chocolate in the microwave until melted, stopping to stir once (approx 1 minute).

3. Pour 1/2 melted chocolate mixture into a lined muffin tin.  Add peanut butter/honey mixture. Add the rest of the melted chocolate.

4. Place in the freezer until hardened (approx 30 minutes). 

He & She Tip: You can easily make this into a recipe for multiple Peanut Butter Cups, I just don't like to keep a lot of extra treats in our house!

Italian Chicken Skillet

Ingredients:

  • 1 lb chicken breasts, cubed
  • 1 cup onion, chopped
  • 4 cups organic zucchini, chopped
  • 2 cups organic broccoli
  • 4 cups organic spinach
  • 1 can kidney beans, drained & rinsed
  • 2 cups marinara sauce (Read the ingredient label before buying. This one from Organico Bello is clean and so is the brand, Victoria, that we get at Costco).

Directions:

1. Cook chicken & onions in large skillet over medium high heat

2. Add zucchini & broccoli & cook until tender, about 3-5 minutes

3. Add spinach, beans & marinara sauce & cook until spinach is wilted

Actually Good for You Alfredo and Pasta Sauce

One of the biggest challenges I had as a clean eating wife trying to get my husband on board was depriving him of Alfredo sauce! He LOVED it! He claims to have never eaten red tomato pasta sauce (though I converted him as long as I make it spicy enough) and for as long as I could remember, he gobbled the creamy, buttery Alfredo sauce up. Well, leave it to me to find him an alternative to his favorite!

Clean Eat Recipe: Actually Good for you Alfredo and Pasta Sauce!

Ingredients:

  • 1 head of cauliflower, medium size, chopped
  • 2 c organic, low sodium chicken broth
  • 1 1/2 tsp garlic powder
  • 1/8 tsp (pinch) nutmeg
  • 1/8 tsp (pinch) black pepper
  • 1 tsp onion powder
  • 1/4 c cottage cheese
  • 1/4 c water
  • 1 TBSP olive oil
Actually Good For You Low Carb & Low Calorie Alfredo & Pasta Sauce

Directions:

1. Boil chicken broth. Add chopped cauliflower and spices. Cook 20 minutes until cauliflower is soft. 

2. Remove from heat and allow mixture to cool approximately 5 minutes. 

3. Blend mixture in blender. (Be CAREFUL! Hot liquid expands). Add cottage cheese, water and olive oil and blend again.

4. Return to pot to simmer on low for approximately 5 minutes.

5. Top your favorite brown rice, black bean, or edamame pasta (try Explore Asian!). You can add seafood or chicken or simply use as a dipping sauce.
