3-Day Eat Clean Food Prep | He and She Eat Clean

I will share the good news first! A few weeks ago I was notified that a casting company was looking for hiking extras for a movie filming near us. I applied and so did my sister and dad. We were all accepted! When we applied I wasn't going through this stressful time period but the filming was this past Thursday and Friday so it was a great way to get my mind off of what is going on while being with my sister and dad doing something really cool! My dad is 66 and has hiked almost the entire Appalachian Trail and as you know, Scott and I are avid hikers. It was a great experience and I can't wait for the movie to come out! I've never been able to do anything like that before so now I'm looking for even more opportunities. Georgia is becoming a hot spot to film movies and TV shows so hopefully I'll be accepted into a few more! On Friday night the scene didn't wrap until around 1 AM and I didn't get home until around 2:30 AM so I have been all messed up on my sleep schedule which seems to through everything else off but it was so worth it!

Now onto the not-so-good news, I haven't really posted a "life update" because honestly, our lives aren't that interesting or different from day-to-day. Yes, we take some awesome hiking trips and spur of the moment vacations that keep life interesting but those are typically in the fall and winter when Scott has time off. However, over the last week we've experienced more stress and uncertainty than we could have ever imagined. I can't go into much detail and probably won't ever be able to but our stress level is THROUGH THE ROOF. I'm not even able to put into words what we are experiencing/have experienced over the last week. The uncertainty, confusion, and mental anguish is something that I would never wish on my worst enemy.

I've obviously had stress in my life before (who hasn't?!) but typically Scott and I try to live as simple as possible to avoid as much stress as possible. To us, unnecessary expenses, things, clutter, etc all lead to stress so we avoid all of them and we've done a pretty good job at it. However, this isn't the stress over a job or stress over body image type thing. Over the last week I've had days where I felt like I could sleep all day but actually never sleep, I've had nights where I fell asleep but didn't really sleep, I've had days where I would be starving, then days where I wouldn't want to eat anything and even water made me feel like I was going to throw up.

We aren't perfect, no one is, but we try to live our lives to the fullest while also trying to improve and inspire others to do the same. As we've mentioned in numerous posts, we try to be as real as possible with you so I also want to share the "down times" as well. I think it's important to learn from each other. Cooking, working out, and just generally taking care of myself have been the last things on my mind and definitely the bottom of the list when it comes to what I wanted to be doing. I've tried to keep a level head and just do what I can day-to-day. We haven't had huge, elaborate food preps in awhile and this was no different but I KNOW how important it is for me mentally and physically to continue to try and live like we normally would during these next few weeks. Our food prep consisted of just a few, very easy-to-prepare items that would last us a few days. We prepared these items just spending a little over an hour in the kitchen.

We made the following:

We've been eating out more than normal and when we do eat at home we don't usually have complete meals because I just haven't been able to keep up and I'm okay with all of this because we are doing the best we can. Using the items we made we can easily add quinoa or rice to the bison or shrimp with a side of veggies. The boiled eggs and protein bars we have on hand for snacks or on-the-go breakfast options.

As far as the gym goes, we've tried to keep up our same routine (I've been doing a combination of the Run Builder and the Transformation to prepare for a few trips we have coming up). However, I haven't been all there mentally or physically but as I mentioned in our 5 Things We've Done to Maintain a Healthy Lifestyle Over 5 Years post, the habit of the habit is more important than the habit itself. My schedule has been a little off because of the filming and the days I do make it into the gym sometimes I can't even stay there long enough to finish my workout or I will just do something completely different than what I thought I was going to be doing.

If we aren't as active on social media, if it takes us longer to respond to emails/comments, and if we don't post as frequently please know that we are going through a stressful time but will hopefully be back to "normal" soon. We just returned from a very, very short trip to Chicago (You already know this if you follow us on Snapchat! We're under hesheeatclean.). We flew out at 7 AM Friday morning (meaning we had to get up at 3:30 AM) and got back home at 2:30 AM Sunday morning. Scott had Friday off, we had airline vouchers, and the Chicago Cubs were in town so we decided to fly up and spend one night to catch two Cubs games. By the time we landed on Friday we only had time to quickly eat breakfast/lunch at Whole Foods and go check in early to drop our stuff off at the hotel. We went directly to the game after that. We had a great time and the Cubs won! It was sunny and around 70 degrees during the game. Once the game was over it started raining and continued all night. We didn't have time to really do anything downtown. We only stopped along the river on the way back to our hotel Friday night.

Saturday morning we woke up, ate breakfast at the hotel (that we bought at Whole Foods - saving money!) and went back to Wrigley Field for game two. The weather on Saturday was definitely different. It was cloudy and 47 degrees but WINDY - with the windchill it felt like it was under 40 degrees. We were FREEZING. Thankfully we were prepared with base layers and hoodies. I considered buying a blanket at the game but figured I could suck it up for a few hours and save the $50. ;-)

This trip was pretty different than many of our others. Normally we go grocery shopping and stock up on food for the trip but since we were only in town for one night we brought snacks with us (mainly bars and nuts). We bought almost ready-to-eat oatmeal cups from Whole Foods (we only needed to add water) for breakfast and ate at Whole Foods for almost every other meal while we were there. The pizza and salad balance each other out, right?! ;-)

Many people ask us about drinking. While we do try to limit our alcohol consumption, if we do drink we normally drink red wine or vodka mixed with Zevia (usually lemon lime). We normally "save" our alcohol consumption for special occasions (like holidays or traveling). We tend to treat alcohol like we do our other "treats", as in occasional indulgences are okay but we still try to find the best quality (just like we do with sweets and things like pizza). I posted the photos below on Snapchat (You will get a much closer look at our day-to-day life there! Again, we are under hesheeatclean.). We love this organic red wine and if you haven't tried Popchips dipped in Greek yogurt, you are missing out!

After waking up Sunday and doing yard work (yes, again!) we started on food prep. We knocked out a pretty large prep in just a few hours. This is going to be a very busy week for both of us so we knew we needed to get this taken care of, even if we didn't want to do it.

I think this might be the first time in the history of me sharing our food prep that I don't have boiled eggs. We are out of eggs for the first time I can remember but I'm going to Costco to buy more so don't worry, they will be in the rotation this week - just not in this picture. Check out this great resource on how to "boil" eggs in the oven! It makes them very easy to peel!

Normally we have a ton of food prepared for the week in advance. Not so much these last few weeks. If you follow us on Snapchat (hesheeatclean) or Instagram (heandsheeatclean) you know that we've been doing a TON of yard work since we got back from San Diego. Two weekends ago we had 50 bales of pinestraw, half a pallet of sod, and a ton of topsoil/dirt to spread. This past Saturday we dug up our entire backyard and put out fescue seed. We basically worked from sun up to sun down both days. We both actually really like this type of work but it is exhausting. We've also had a lot going on in other areas of our lives so things are a little more hectic than normal but that is what makes life interesting, right?!

I posted a lot of the pictures on Snapchat but forgot to save them to my phone (Snapchat newbie!) so this is the only one I have! All of this yard work is great training for Tough Mudder too, especially when it starts pouring on you! Saturday night our backyard was basically like our own Tough Mudder course.

 

So instead of a lot of food prepared for the week, I only had a little time (and energy) to make a few things. This is to show you that not every week is 100% but small efforts add up. It took me less than one hour to prepare boiled chicken, brown rice, asparagus, and chocolate chunk protein bars. I picked this because it is easy to prepare and you can eat it many different ways. I normally use our boiled chicken in Clean Eating Chicken Salad or Savory Chicken Casserole but those take more time than I wanted to spend. We also have TLS Protein Powder packets that we can use as a meal, if needed.

In other BIG NEWS...We are running the Tough Mudder again in ONE week! Tough Mudder graciously offered us free media passes and since we did it last year and absolutely loved it we decided to do it again! You can read about our experience last year here. This year we have a team so we are very excited to have a larger group!

We stay in shape all year long but sometimes we tend to do slack on cardio (ahem, winter months when we don't hike as often). In order to prepare for the Tough Mudder we have been upping our cardio a bit. We started out doing the She Sweats 12-Week Run Builder when we got back from San Diego but recently transitioned into the She Sweats Extreme 4-Week Shred. Although this isn't a race, we need to improve our cardio anyway for our hiking trips coming up. The challenge is not to be taken lightly though, it is 10.8 miles with 22 obstacles! The obstacles for the Atlanta race include things like Arctic Enema (which was brutal last year), Everest, Cliff Hanger, and Mud Miles. Sounds fun, right?!

As we mentioned, the event is a challenge, not a race. It is about teamwork above all else, and helping each other overcome their physical and mental obstacles as a team. When Scott and I participated last year we both had to encourage each other through many obstacles. What amazed me though was the support from people we had never even met. It truly felt like a community not a competition. I remember I needed help on the Everest obstacle and some men stayed at the top with Scott to grab me as I ran up, without their help I wouldn't have made it!
